Crockpot yogurt

1/2 gallon (8 cups) milk -I use whole
1/2 c plain yogurt (individual size for the first time)
sweetener of choice (1/2 c honey)
1 T vanilla (optional)

Pour 8 cups of milk into crockpot. Turn it on low, put lid on and heat milk for 2 1/2 hours.

Then turn crockpot off and let it sit covered for 2 1/2-3 hours.

Then, remove 1-2 cups of the yogurt from the crockpot. Add plain yogurt, honey and vanilla whisk. Add back into crockpot and whisk good. Cover the crockpot and wrap it in a thick towel (beach towel works good) to insulate it. Now let it culture by letting it stand for 8+ hours or overnight.

* I don't make this to eat plain, I don't really like the taste plain like this. But I haven't played around with it to much by adding fruit or jam or more sugar?? But it is awesome for smoothies and popsicles. This usually gives me 2 quart and 1 pint jars worth of yogurt. I make smoothies for breakfast or snack and pour the extra into popsicle molds.

I usually start it late afternoon 3 or 4 oclock.

Orange Chicken

12 Chicken tenders
3 eggs
1/2 c corn starch
1/2 c flour

3/4 c sugar
1 T soy sauce
4 T ketchup

Dip chicken in eggs then corn starch, flour and garlic salt mixture-then fry. Put fried chicken in baking dish.

Boil sauce ingredients. Pour over chicken, bake at 350 45 min - 1hr.

This is awesome!!! I usually double the sauce for a meal. Actually I usually 4x it and freeze half making it that much easier next time.

Fruit Pizza

Crust:
2 c. all purpose flour
1/2 c powdered sugar
1 cup cold butter

Filling:
8oz cream cheese softened
small marshmellow cream

Fruit: I usually use:
mandarin oranges
pineapple
kiwi
strawberries
blueberries are good too

Glaze
1/2 c sugar
2 T cornstarch
1 c unsweetend pineapple juice (if you use a can of pineapple chunks just use the juice from the can)
1 T lemon juice

Directions:
In a large bowl combine flour and powdered sugar. Cut in butter until crumbly. Press into an ungreased cookie sheet or pizza pan. Bake at 350 for 12-15 minutes or until very lightly browned.

In another mixing bowl beat the cream cheese and marshmellow cream until smooth, spread on cooled crust. Arrange fruit on top.

For Glaze use a small saucepan, combine sugar and cornstarch. Stir in pineapple juice and lemon juice until smooth. Bring to boil, cook and stir for 2 minutes or until thickened. Cool slightly. Drizzle over fruit then refrigerate until chilled.

* We love this and make it alot in the summer. You really can use whatever fruit you want and however much of it you want. The filling is just my fruit dip that I make. The glaze isn't always necessary but oh so good :).

I got this recipe from taste of home then changed it up a bit. The actual recipe uses sugar cookie for the base but I think that is to sweet. Enjoy!

Homemade French Bread

2 1/2 c warm water
2 T yeast
3 T sugar
2 T white vinegar
*mix these four together and let sit util bubbly, about 10 min*

then add:
1 T. salt
1/3c. canola oil
6 c flour (or a little more if its to soft)
*I do most of this in my kitchen aid with the dough hook and then knead the last cup or so by hand.

Knead for 2-5 minutes and then put in oven with a small pot of boiling water. The water will keep the dough moist. Punch down the dough when it gets to the top of the mixing bowl (2-5 times)

Put the dough on a greased countertop and divide into 3 sections. Spray a cookie sheet with cooking spray and sprinkle a thin layer of cornmeal on the bottom of the sheet. Roll the dough balls into rentangle/long French bread shapes. Slash tops of bread diagonally 3-5 times and cover with a beaten egg. Let rise 30 minutes (or until doubled). Or you can put them in your oven at 170 and wait until they are the size you want to cook them at. Once they are to the right size turn up your stove to 375 without opening the door and let them bake until done. 375 for 30 minutes.

*I LOVE this recipe! This is the same recipe I use to make breadbowls I just grab about a fist size and make it into a ball instead of a loaf, then do everything the same. They are delicious. This also freezes good. I usually make spagetti or something and we eat one loaf, then the other two I make into chicken bacon subs or bread bowls and throw in the freezer.

I got this recipe from Deals to Meals.

Velvety Veggetable Cheese Soup

1 pkg (16 oz) frozen broccoli, cauliflower and carrot mix
2 cans (14oz each) chicken broth
3/4 lb (12 oz) velveeta
2-3 potatoes, peeled and diced
*chicken if you want*

Place vegggies and broth in large saucepan; cover. Bring to boil on medium-high heat. Reduce heat to low, simmer 10 min or until veggies are tender.

Mash veggies with potato masher to desired consistency.

Stir in velveeta. Cook 5 minutes or until velveeta is melted.

*This is just as good with fresh veggies. I LOVE this soup, even Glen really likes it and he doesn't like broccoli and cauliflower but where it is mashed up you can tell. This is also great with bread bowls and freezes well.

White Chili

1 Med onion
1 T canola oil
2 cans Great northern beans
1 can green chilies
1 can white corn
1 c. cooked, diced chicken
1 1/2 c chicken broth
1/2 T garlic powder
1/2 T oregano
1 T cumin
1/4 t. cayenne pepper
16 oz sour cream
2 c. cheese

Saute onion in oil until transparent. Add all ingredients except sr. cream and cheese. (if beans and corn are drained it will be a thicker chili). Cook 30-45 minutes, add sr cream and 1/2 cheese. Put into bowls and top with remaining cheese.

*I saute onion and then through everything but sr cream and cheese in crock pot. Then I put that in last 30 minutes to an hour. I've left it in the crockpot anywhere from 3-6ish hours :).

*I didn't think I would like this but it is delicious, very flavorful!! We love it in bread bowls, Lincoln always eats 3 bowls. And it won 1st place at the church chili cook off last year!

1/2 t salt
3-41/2 c flour (I used 1 c wheat and 3 1/4 c white)
1/2 c diced pepperoni (I'll use a little more next time)
1/2 c mozzarella
Parmesan
Italian seasoning
Skewers ( we soaked our dowels first, let them dry a bit)
melted butter
pizza sauce (used tomato sauce, garlic and Italian seasoning)

In large bowl combine water, sugar and yeast, let stand for 10 minutes or until yeast is bubbly.

Add salt and stir. Add 1 1/2c flour and mix well. Add peperoni, Italian seasoning, Parmesan and mozzarella. Gradually add more flour until dough starts to pull away from the sides of bowl and barely sticks to your finger.

Cover and let rise 20 minutes.

Remove from bowl and place on a lightly floured surface. Spray baking sheet with cooking spray. Roll into rectangle and cut into 12 strips with pizza cutter.

Wrap dough around skewer and bake 425 for 15 minutes. Brush melted butter on it and sprinkle Parmesan over it.

*We loved these! We just had veggies with ranch dip with it and it was a way fun EASY dinner! Next time I will try spraying the dowels as it did stick to the stick :).
